Hummus (from Arabic, meaning chickpeas) is a typical and unavoidable culinary preparation of Near Eastern cuisine (mashrek). It is made from chickpea purée and tahineh (tahini) to which a sprig of lemon juice is added to give it a sweet and subtly tangy taste. As a starter, accompaniment or aperitif, this mezzé, with its smooth texture, is by far the favourite of lovers of levantine flavours.
